Sweet Potato Sausage Casserole Recipe

Ingredients

  • 8 ounces uncooked spiral pasta
  • 8 ounces smoked sausage, cut into 1/4 inch slices
  • 2 medium sweet potatoes, peeled and cut into 1/2 inch cubes
  • 1 cup chopped green pepper
  • 1/2 cup chopped onion
  • 2 tablespoons olive oil
  • 1 teaspoon minced garlic
  • 1 can (14-1/2 ounces) diced tomatoes, undrained
  • 1 cup heavy whipping cream
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper
  • 1 cup (4 ounces) shredded cheddar cheese

Directions

Cook pasta according to package directions. Meanwhile, in a large skillet, cook the sausage, sweet potatoes, green pepper and onion in oil over medium heat for 5 minutes or until vegetables are tender. Add garlic; cook 1 minute longer. Drain.

Add the tomatoes, cream, salt and pepper. Bring to a boil; remove from the heat. Drain pasta; stir into sausage mixture. Transfer to a greased 13-in. x 9-in. baking dish. Sprinkle with cheese.

 

Bake, uncovered, at 350° for 25-30 minutes or until bubbly. Let stand for 5 minutes before serving. Yield: 8 servings.

 

Corn Bread Sausage Stuffing Recipe

8 Servings Prep: 15 min. Bake: 4 hours

 

Ingredients

  • 1 pound mild or hot bulk pork sausage
  • 1/2 cup butter, cubed
  • 2 cups chopped onion
  • 1-1/2 cups chopped celery
  • 2 cups soft bread crumbs
  • 2 eggs, beaten
  • Salt and pepper to taste
  • 2 to 3 tablespoons sage
  • 5 cups crumbled yellow corn bread

Directions

In a frying pan, cook the sausage until done. Remove sausage and set aside; drain any fat. Melt butter; sauté onion and celery until crisp-tender. Combine vegetables with bread crumbs, eggs, seasonings, corn bread and sausage. Stuff into a turkey or Cornish game hens; roast according to your favorite recipe.

Yield: Stuffing is enough for a 12-16 pound turkey or 8-10 (1-1/2 pounds each) Cornish game hens.

Cheese and Sausage Appetizers Recipe

22 Servings Prep: 20 min. Bake: 15 min.

 

Ingredients

  • 16 ounces (4 cups) shredded cheddar cheese
  • 1 cup butter, softened
  • 2 cups all-purpose flour
  • 1/2 teaspoon salt
  • 1/2 teaspoon black or cayenne pepper
  • 8 ounces pork sausage, cooked and drained

Directions

In large bowl, beat the cheese, butter, flour, salt and pepper on medium-low speed. Stir in cooked sausage. Form dough into 1-in. balls; place on ungreased baking sheet.

 

Bake at 400° for 15-20 minutes or until light golden brown. Serve warm or cold. Store in refrigerator or freezer. Yield: about 5-1/2 dozen appetizers.

Onion Soup with Sausage Recipe

4 Servings Prep/Total Time: 20 min.

 

Ingredients

  • 1/2 pound pork sausage links, cut into 1/2-inch pieces
  • 1 pound sliced fresh mushrooms
  • 1 cup sliced onion
  • 2 cans (14-1/2 ounces each) beef broth
  • 4 slices Italian bread
  • 1/2 cup shredded part-skim mozzarella cheese

Directions

In a large saucepan, cook sausage over medium heat until no longer pink; drain. Add mushrooms and onion; cook for 4-6 minutes or until tender. Stir in the broth. Bring to a boil. Reduce heat; simmer, uncovered, for 4-6 minutes or until heated through.

Ladle into four 2-cup ovenproof bowls. Top each with a slice of bread; sprinkle with cheese. Broil until cheese is melted. Yield: 4 servings.

 Spinach & Sausage Egg Bake Recipe

12 Servings Prep: 20 min. Bake: 30 min.

 

Ingredients

  • 1 pound bulk pork sausage
  • 1 package (10 ounces) frozen chopped spinach, thawed and squeezed dry
  • 6 bacon strips, cooked and crumbled
  • 1/4 cup finely chopped onion
  • 1/4 cup finely chopped sweet red pepper
  • 1 cup (4 ounces) shredded Monterey Jack cheese
  • 1 cup (4 ounces) shredded cheddar cheese
  • 10 eggs
  • 3/4 cup 2% milk
  • 2 teaspoons snipped fresh dill or 1/2 teaspoon dill weed
  • 1-1/2 teaspoons chili powder
  • 1 teaspoon garlic powder
  • 1 teaspoon pepper
  • 1/4 teaspoon salt

Directions

In a large skillet, cook sausage over medium heat until no longer pink; drain. Spoon into a greased 13-in. x 9-in. baking dish. Layer with spinach, bacon, onion, red pepper and cheeses.

In a large bowl, whisk the eggs, milk and seasonings; pour over top. Bake at 375° for 30-35 minutes or until a knife inserted near the center comes out clean. Let stand for 5 minutes before cutting. Yield: 12 servings.
